ISO 22043:2020—Horizontal Closed Ice-Cream Freezers

Ice-cream is perishable and requires careful treatment. Exposing ice-cream to temperatures that are too high will negatively affect its body, texture, and flavor characteristics. ISO 22043:2020—Ice-Cream Freezers – Classification, Requirements And Test Conditions details specifications for horizontal closed ice-cream freezers.

Commercial Freezer VS Ice-Cream Freezer

Ice-cream freezer is a generic term used to cover various types of commercial freezers that are designed for storing ice cream and similar frozen items, such as sorbets, gelato, and frozen yogurt. It is similar to a commercial freezer, but it maintains more precise temperatures and is more competent in keeping icy treats in ideal shape. When storing ice cream at the ideal temperature, it will always be smooth and the taste and consistency will not be compromised.

What Is ISO 22043?

ISO 22043:2020 specifies the classification, requirements, and test methods for horizontal closed ice-cream freezers with access of the product from the top via transparent or solid lid(s). The ice-cream freezers defined in the standard are different from supermarket segment freezers, as they work with static air cooling, with a skin evaporator (no evaporator fan) and are used specifically for the storage and display of pre-packed ice-cream. ISO 22043:2020 is only applicable to integral type refrigeration systems. Ice-cream freezers defined in this standard are intended to have a net volume ≤600 l; for transparent lid ice-cream freezers only, they are intended to have a net volume/TDA ≥ 0.35 m.

The standard is not applicable to remote and secondary system type cabinets

When Was Ice-Cream Invented and Why?

The emperors of the Tang Dynasty (618 – 907 AD) are believed to have been the first to eat “a frozen milk-like confection.” This version was made with cow, goat, or buffalo milk heated with flour and allowed to ferment. Camphor, an aromatic substance harvested from evergreen trees, was added to thicken the texture and enhance the flavor. This “yogurt” was then “refrigerated” before being served. King Tang of Shang had a staff of 2,271 people, which included 94 ice-men who would lug ice to the palace to make a dish made of koumiss (heated, fermented milk), flour, and camphor.

YouGov asked 1,000 U.S. adults about their favorite ice cream flavor, and many Americans ranked vanilla and chocolate at the top. 59% of adults liked vanilla, and 11% of adults said it was their favorite. The vanilla flavor dates back to ancient Mesoamerican civilizations. Vanilla beans are highly prized, and their popularity grew during the colonial era. Furthermore, 51% of adults said they like chocolate and 10% said it was their favorite. The origins of chocolate can be traced back to the Aztecs and Mayans, who enjoyed beverages made from cocoa beans. They drank chocolate during their rituals and used it as medicine.  Closely following America’s most popular flavors were cookies and cream (43% of adults liked it and 7% said it was their favorite), strawberry (43% of adults liked it and 6% said it was their favorite), and chocolate chip (39% of adults liked it and 2% said it was their favorite).
